Description

A light, flavorful way to turn fresh zucchini into a crisp, golden side that pairs well with grilled proteins or can be enjoyed as a light lunch.


Ingredients

  • 2 medium zucchinis, grated
  • 2 large eggs
  • 1/4 cup oat flour (or almond flour for low-carb option)
  • 1/4 cup grated Parmesan cheese (optional)
  • 1/4 cup plain Greek yogurt or cottage cheese
  • 1 garlic clove, finely minced
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon dried oregano or thyme
  • 2 tablespoons chopped fresh parsley or dill
  • 1 tablespoon olive oil or olive oil spray for pan-frying

Instructions

  1. Grate the zucchini and squeeze it in a clean towel to remove excess moisture.
  2. In a medium bowl, combine the zucchini with eggs, oat or almond flour, grated Parmesan, Greek yogurt, minced garlic, salt, pepper, dried herbs, and fresh herbs; stir until a loose batter forms.
  3. Heat a non-stick skillet over medium heat, add oil, and scoop 1/4 cup of the batter, flattening into patties.
  4. Cook fritters for about 3–4 minutes on each side until golden and firm in the center.
  5. Transfer cooked fritters to a plate lined with paper towels to drain excess oil and serve warm.

Notes

Ensure to squeeze out excess moisture from zucchini for crispy fritters. Avoid overcrowding the pan while cooking.
