This Crockpot Lasagna Soup is a comforting, cheesy, and savory one-pot meal packed with classic Italian flavors. Perfect for chilly nights and lazy weekends!
Ingredients
1 lb ground beef
1/2 medium onion, diced
1 red bell pepper, diced
1 can (14.5 oz) petite diced tomatoes
1 can (28 oz) crushed tomatoes
1 tsp minced garlic
1 tbsp Italian seasoning
4 cups beef broth
12 oz lasagna noodles, broken
1/2 cup ricotta cheese
1 cup shredded mozzarella
1 cup shredded parmesan
Salt and pepper to taste
Instructions
1. Brown the ground beef in a skillet and drain grease.
2. Transfer beef to crockpot. Add onion, bell pepper, tomatoes, garlic, seasoning, and broth.
3. Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours.
4. Break lasagna noodles and stir in. Cook on HIGH for 30–45 minutes.
5. Serve hot with ricotta, mozzarella, and parmesan on top.
Notes
Add fresh spinach in the last 10 minutes for extra veggies.
Use oven-ready noodles to simplify.
Store leftovers without cheese and add fresh toppings when reheating.
