- 4 cups frozen shredded hash browns, thawed and dried
- 1 pound ground turkey sausage, cooked and drained
- 6 large eggs
- 1 cup low-fat cottage cheese
- 1 ½ cups shredded cheddar cheese
- ½ cup chopped green onions or chives
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon salt
- ½ teaspoon black pepper
- Cooking spray for greasing the pan
Instructions
- Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
- In a skillet over medium heat, cook the ground turkey sausage until it’s browned and crumbly. Drain any excess liquid and set aside.
- In a large bowl, whisk together the eggs, cottage cheese, garlic powder, onion powder, salt, and black pepper until well combined.
- Add the thawed and dried hash browns, the cooked sausage, half of the shredded cheddar cheese, and the chopped green onions. Mix everything well.
- Pour the hash brown mixture into the prepared baking dish, spreading it evenly across the bottom. Top with the remaining shredded cheese.
- Bake uncovered in the preheated oven for 40–45 minutes, or until the top is golden and the center is set. Allow it to rest for 5 minutes before slicing.
Notes
Thaw and dry the hash browns completely to avoid excess moisture. For a vegetarian twist, consider using plant-based substitutes.
