Description

Ingredients

  • 1 pound ground turkey or lean ground beef (93% lean or higher)
  • 1 cup cooked brown rice or quinoa
  • 1 green bell pepper, diced
  • 1 can diced tomatoes (14.5 ounces)
  • 1 cup black beans (drained and rinsed)
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, cook the ground turkey or ground beef until browned; drain excess fat.
  3. Stir in the diced bell pepper, cooked rice or quinoa, diced tomatoes, black beans, cumin, chili powder, salt, and pepper. Cook for about 5-7 minutes until heated through.
  4. Transfer the mixture to a baking dish and sprinkle with cheese if using.
  5. Bake in the preheated oven for 20-25 minutes until the cheese is melted and bubbly.
  6. Garnish with fresh cilantro before serving.

Notes

Use lean meat for a healthier dish. Feel free to alter the seasonings and add more vegetables to suit your taste.
