Description

A delightful way to enjoy this traditional Indian beverage with a perfect blend of spices and tea.


Ingredients

  • 5 cups filtered water
  • 34 tablespoons Assam black tea
  • 23 cinnamon sticks
  • 23 star anise
  • 12 whole cloves
  • 8 green cardamom pods
  • 1 tablespoon black peppercorns
  • 1/4 teaspoon ground nutmeg
  • 1/3 cup chopped ginger root
  • 1/4 teaspoon vanilla extract
  • 1/4 cup granulated sugar
  • 2 tablespoons dark brown sugar
  • 1 tablespoon honey (optional)
  • 1 tablespoon maple syrup (optional)

Instructions

  1. Crush the Spices: Start by crushing the whole spices using a mortar and pestle.
  2. Toast the Spices: Dry toast the crushed spices in a saucepan over low heat for about 2-3 minutes.
  3. Add Water and Ginger: Pour in the filtered water along with the chopped ginger and nutmeg into the saucepan with the toasted spices.
  4. Boil and Simmer: Bring the mixture to a boil, then immediately reduce heat and simmer for 5-10 minutes.
  5. Add Tea: Bring the mixture back to a boil again, then remove it from heat and stir in the Assam black tea.
  6. Steep the Tea: Let the tea steep for 3-5 minutes.
  7. Strain the Concentrate: Pour it through a strainer into a large glass bowl or pitcher.
  8. Sweeten and Flavor: Stir in sweeteners while warm, and add the vanilla extract.
  9. Cool Down: Allow the chai concentrate to cool to room temperature.
  10. Store It: Pour the cooled chai concentrate into a glass bottle and store it in the refrigerator.
