Ingredients

- 5 cups filtered water
- 3–4 tablespoons Assam black tea
- 2–3 cinnamon sticks
- 2–3 star anise
- 12 whole cloves
- 8 green cardamom pods
- 1 tablespoon black peppercorns
- 1/4 teaspoon ground nutmeg
- 1/3 cup chopped ginger root
- 1/4 teaspoon vanilla extract
- 1/4 cup granulated sugar
- 2 tablespoons dark brown sugar
- 1 tablespoon honey (optional)
- 1 tablespoon maple syrup (optional)
Instructions
- Crush the Spices: Start by crushing the whole spices using a mortar and pestle.
- Toast the Spices: Dry toast the crushed spices in a saucepan over low heat for about 2-3 minutes.
- Add Water and Ginger: Pour in the filtered water along with the chopped ginger and nutmeg into the saucepan with the toasted spices.
- Boil and Simmer: Bring the mixture to a boil, then immediately reduce heat and simmer for 5-10 minutes.
- Add Tea: Bring the mixture back to a boil again, then remove it from heat and stir in the Assam black tea.
- Steep the Tea: Let the tea steep for 3-5 minutes.
- Strain the Concentrate: Pour it through a strainer into a large glass bowl or pitcher.
- Sweeten and Flavor: Stir in sweeteners while warm, and add the vanilla extract.
- Cool Down: Allow the chai concentrate to cool to room temperature.
- Store It: Pour the cooled chai concentrate into a glass bottle and store it in the refrigerator.
