- 2 cups all-purpose flour
- 1 cup sugar
- 1/2 teaspoon salt
- 1 tablespoon baking powder
- 1/2 cup unsalted butter, melted
- 1 cup milk
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups fresh or frozen cherries, pitted and halved
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan, or line it with parchment paper.
- Whisk together the flour, sugar, salt, and baking powder in a large bowl.
- In another bowl, whisk together the melted butter, milk, eggs, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined.
- Fold in the cherries gently to distribute them evenly.
- Transfer the batter into the prepared loaf pan, smoothing the top.
- Bake for 50-65 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
- Cool in the pan for 10-15 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
To avoid cherries sinking, toss them with a teaspoon of flour before folding into the batter. Use room temperature ingredients for better mixing.
