Ingredients

- 2 cups all-purpose flour
- 1/4 teaspoon salt
- 1 cup unsalted butter, cold and cubed
- 1/4 cup ice water
- 2 cups fresh or canned cherries, pitted
- 3/4 cup sugar
- 1 tablespoon cornstarch
- 1 teaspoon vanilla extract
- 1 egg, beaten (for egg wash)
Instructions
- Preheat the oven to 400°F (200°C).
- Mix the flour and salt in a bowl. Cut in the butter until the mixture resembles coarse crumbs. Stir in the ice water a tablespoon at a time until the dough comes together.
- Roll out the dough on a floured surface and cut into squares.
- Mix the cherries, sugar, cornstarch, and vanilla in another bowl. Spoon a portion of the cherry mixture onto the center of each dough square.
- Fold the squares over to form triangles and seal edges with a fork.
- Brush the tops with beaten egg and place on a baking sheet.
- Bake for 20-25 minutes or until golden brown.
- Allow to cool slightly before serving.
Notes
For a lighter option, you can swap half the butter for cold light vegetable shortening. Use frozen cherries if fresh aren’t available. Be cautious about overfilling to avoid leaks.
