Ingredients

  • 3/4 teaspoon baking soda
  • 10 tablespoons unsalted butter, melted
  • 1/2 cup light brown sugar, packed

  • 1 (14 oz) can sweetened condensed milk
  • 2 tablespoons sour cream (or plain yogurt)
  • 1 large egg yolk
  • 1/4 cup freshly squeezed lemon juice
  • 1 tablespoon finely grated lemon zest

Instructions

  1. Preheat the oven to 350°F (175°C). Start by lining an 8×8-inch baking pan with parchment paper and spraying it with nonstick spray.
  2. Combine dry ingredients: In a large bowl, whisk together the flour, oats, salt, and baking soda.
  3. Mix wet ingredients: In another bowl, combine the melted butter, brown sugar, and vanilla extract. Whisk until well mixed.
  4. Bring wet and dry together: Gradually add the wet ingredients into the dry mixture and stir until combined.
  5. Reserve 3/4 cup of this mixture for the topping.
  6. Press the remaining mixture into the prepared pan.
  7. Bake the crust for about 10 minutes until it just begins to set.
  8. Make the lemon filling: In a medium bowl, whisk together the sweetened condensed milk, sour cream, egg yolk, lemon juice, lemon zest, and remaining vanilla until smooth.
  9. Assemble the bars: Pour the lemon filling over the crust and sprinkle the reserved crumb mixture on top.
  10. Bake again for an additional 17 to 20 minutes, or until the top is golden brown and the filling is set.
  11. Cool completely before slicing into squares.
