A simple recipe for making delicious homemade pasta from scratch.
Ingredients

- 2 cups (240g) all-purpose flour, spooned & leveled
- 3 large eggs
- ½ tsp sea salt
- ½ Tbsp extra-virgin olive oil
Instructions
- On a clean surface, pile the flour and form a well in the center. Add the eggs, olive oil, and salt into the well.
- Use a fork to slowly incorporate the flour into the eggs. Then mix with your hands until a shaggy dough forms.
- Knead the dough for 8–10 minutes until smooth. If it feels too dry, add a few drops of water. If it’s sticky, dust with flour.
- Shape the dough into a ball, wrap it in plastic wrap, and let it rest for 30 minutes at room temperature.
- Cut the rested dough into 4 pieces. Take one piece and flatten it into a small oval.
- Pass the flattened piece through a pasta machine on setting 1 three times. Then fold it into thirds and roll again through settings 2 and 3 (three times each). Finally, roll once on settings 4, 5, and 6.
- Lay the rolled pasta sheets on a floured baking sheet. Dust them lightly with flour and fold them. Repeat this step with the remaining pieces of dough.
- Use a cutter to shape the pasta as desired, for example, into fettuccine.
- Boil the cut pasta in salted water for 1–2 minutes until it’s al dente. Drain and serve immediately.
Notes
Use high-quality flour for the best taste and texture. Knead well for a nice, chewy texture. You can use a rolling pin if you don’t have a pasta machine.
