Ingredients

  • 1.5 lbs (700g) boneless, skinless chicken thighs
  • 2 tbsp coconut oil
  • 1/2 cup coconut milk
  • 3 tbsp honey
  • 12 tbsp chili sauce (adjust to taste)
  • 3 cloves garlic, minced
  • 1 tsp ginger, grated
  • 1 tbsp soy sauce
  • 1 lime, juiced
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)
  • Toasted sesame seeds (optional)

Instructions

  1. Heat coconut oil in a large skillet over medium heat.
  2. Season the chicken thighs with salt and pepper, then sear them in the skillet for 4-5 minutes per side until golden brown.
  3. Reduce heat to low and add the minced garlic and grated ginger, sautéing for 1-2 minutes until fragrant.
  4. In a bowl, mix together the coconut milk, honey, chili sauce, soy sauce, and lime juice; pour this mixture over the chicken.
  5. Allow to simmer gently for 10-12 minutes, turning occasionally until the sauce thickens and the chicken is fully cooked through.
  6. Garnish with chopped cilantro and toasted sesame seeds before serving.

Notes

For a vegetarian version, substitute chicken with firm tofu. Adjust chili sauce to taste for desired spiciness.
