Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, whisk together honey, Dijon mustard, olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper.
- Place the chicken breasts on a prepared sheet pan and pour the honey mustard mixture over them, coating well.
- Arrange the assorted vegetables around the chicken on the sheet pan.
- Roast in the oven for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender.
- Garnish with chopped fresh parsley before serving.
