- 4 boneless, skinless chicken thighs or breasts
- ½ cup soy sauce
- ½ cup brown sugar
- ¼ cup ketchup
- ¼ cup pineapple juice
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 tablespoon vegetable oil
- 1 tablespoon rice vinegar
- 1 teaspoon black pepper
- 1 teaspoon red pepper flakes (optional)
- Green onions, sliced (for garnish)
- Sesame seeds (for garnish)
Instructions
- Prepare the Marinade: In a large bowl, whisk together the soy sauce, brown sugar, ketchup, pineapple juice, minced garlic, grated ginger, vegetable oil, rice vinegar, black pepper, and red pepper flakes if using.
- Marinate the Chicken: Add the chicken to the marinade and cover. Refrigerate for at least 60 minutes, preferably overnight.
- Preheat the Grill or Oven: Preheat your grill to medium-high heat or oven to 375°F (190°C).
- Cook the Chicken: Remove chicken from marinade and shake off excess. Grill for 6-7 minutes on each side until internal temperature reaches 165°F (75°C) or bake for 25-30 minutes until cooked through.
- Glaze with Marinade: Brush additional marinade over the chicken during the last few minutes of cooking.
- Serve: Let chicken rest for a few minutes, garnish with green onions and sesame seeds, then serve.
Notes
For best flavor, marinate overnight. Adjust spice levels with red pepper flakes or jalapeños as desired.
