- 2 tablespoons olive oil
- 4 chicken thighs, bone-in and skin-on
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, sliced
- 1 can (14 oz) diced tomatoes
- 1 cup chicken broth
- 1 tablespoon dried oregano
- 1 tablespoon dried basil
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add chicken thighs and sear until browned on both sides. Remove chicken and set aside.
- In the same skillet, add onion, garlic, and bell pepper. Sauté until softened.
- Stir in diced tomatoes, chicken broth, oregano, basil, salt, and pepper.
- Return chicken to skillet, cover, and simmer for about 30-40 minutes until chicken is cooked through.
- Serve over pasta or rice and garnish with parsley.
Notes
For extra flavor, consider marinating the chicken thighs in your favorite spices or herbs a few hours before cooking. Add red pepper flakes for a bit of heat.
