Description

Hunter’s Chicken is a hearty dish combining tender chicken, rich tomatoes, and aromatic herbs, perfect for cozy dinners and gatherings.


Ingredients

  • 2 tablespoons olive oil
  • 4 chicken thighs, bone-in and skin-on
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, sliced
  • 1 can (14 oz) diced tomatoes
  • 1 cup chicken broth
  • 1 tablespoon dried oregano
  • 1 tablespoon dried basil
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chicken thighs and sear until browned on both sides. Remove chicken and set aside.
  3. In the same skillet, add onion, garlic, and bell pepper. Sauté until softened.
  4. Stir in diced tomatoes, chicken broth, oregano, basil, salt, and pepper.
  5. Return chicken to skillet, cover, and simmer for about 30-40 minutes until chicken is cooked through.
  6. Serve over pasta or rice and garnish with parsley.

Notes

For extra flavor, consider marinating the chicken thighs in your favorite spices or herbs a few hours before cooking. Add red pepper flakes for a bit of heat.
