- 4 boneless, skinless chicken thighs
- 2 tablespoons olive oil
- 1 onion, sliced
- 2 bell peppers (red and green), sliced
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 1 cup chicken broth
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add chicken thighs and brown on both sides.
- Remove chicken from the skillet and set aside.
- In the same skillet, add sliced onions, bell peppers, and garlic. Sauté until soft.
- Stir in diced tomatoes, chicken broth, oregano, basil, salt, and pepper.
- Return chicken to the skillet, cover, and simmer on low for about 30-40 minutes, until chicken is cooked through.
- Garnish with fresh parsley before serving.
Notes
Serves well over rice, pasta, or with crusty bread. Can be stored in the refrigerator for up to three days or frozen for three months.
