  • ½ cup milk

  • Salt and pepper, to taste
  • 1 egg, beaten (for egg wash)
  • 1 prepared pie crust (store-bought or homemade)
  • Fresh herbs (like chives or parsley) for added flavor, optional

Instructions

  1. Begin by peeling and chopping the potatoes into small chunks. Boil the potatoes in salted water until tender, about 15-20 minutes. Drain and return to the pot.
  2. Add the butter, milk, and cheese to the potatoes and mash until smooth. Season with salt and pepper, and mix in fresh herbs if desired.
  3. Preheat your oven to 375°F (190°C). Roll out your pie crust into a pie dish. Fill the crust with the potato mixture and smooth the top. Brush the edges with the beaten egg.
  4. Bake in the preheated oven for 30-35 minutes until the crust is golden brown and the filling is heated through.

Notes

For a creamier filling, add more milk or cream. Use different types of cheese for unique flavors. Breadcrumbs can add a nice crunch on top.
