- 2 tablespoons butter
- ½ cup milk

- Salt and pepper, to taste
- 1 egg, beaten (for egg wash)
- 1 prepared pie crust (store-bought or homemade)
- Fresh herbs (like chives or parsley) for added flavor, optional
Instructions
- Begin by peeling and chopping the potatoes into small chunks. Boil the potatoes in salted water until tender, about 15-20 minutes. Drain and return to the pot.
- Add the butter, milk, and cheese to the potatoes and mash until smooth. Season with salt and pepper, and mix in fresh herbs if desired.
- Preheat your oven to 375°F (190°C). Roll out your pie crust into a pie dish. Fill the crust with the potato mixture and smooth the top. Brush the edges with the beaten egg.
- Bake in the preheated oven for 30-35 minutes until the crust is golden brown and the filling is heated through.
Notes
For a creamier filling, add more milk or cream. Use different types of cheese for unique flavors. Breadcrumbs can add a nice crunch on top.
