Description

Crispy and cheesy Jalapeno Corn Nuggets, perfect as a snack or appetizer with a spicy kick.


Ingredients

  • 1 cup sweet corn (fresh or canned)
  • 12 jalapenos (seeded and diced)
  • 1 cup cheddar cheese (shredded)
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup milk
  • 1 egg
  • Oil for frying

Instructions

  1. In a large bowl, combine the corn, jalapenos, and cheese.
  2. In another bowl, mix the flour, baking powder, salt, and pepper.
  3. In a separate small bowl, whisk together the milk and egg.
  4. Add the wet ingredients to the dry ingredients and stir until just combined. Fold in the corn mixture.
  5. Heat oil in a frying pan over medium heat.
  6. Drop spoonfuls of the batter into the hot oil and fry until golden brown on both sides, about 3-4 minutes.
  7. Remove from oil and drain on paper towels. Serve warm.

Notes
