Ingredients

- 1 cup sweet corn (fresh or canned)
- 1–2 jalapenos (seeded and diced)
- 1 cup cheddar cheese (shredded)
- 1/2 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup milk
- 1 egg
- Oil for frying
Instructions
- In a large bowl, combine the corn, jalapenos, and cheese.
- In another bowl, mix the flour, baking powder, salt, and pepper.
- In a separate small bowl, whisk together the milk and egg.
- Add the wet ingredients to the dry ingredients and stir until just combined. Fold in the corn mixture.
- Heat oil in a frying pan over medium heat.
- Drop spoonfuls of the batter into the hot oil and fry until golden brown on both sides, about 3-4 minutes.
- Remove from oil and drain on paper towels. Serve warm.
Notes
Adjust the amount of jalapenos for desired spice level. Serve with dipping sauces like ranch, salsa, or guacamole.
