Ingredients

  • 1 box Jiffy corn muffin mix
  • 1 can creamed corn
  • 1 can whole kernel corn (drained)
  • 1 cup sour cream
  • 1/2 cup melted butter
  • 1 cup shredded cheddar cheese (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the Jiffy corn muffin mix, creamed corn, whole kernel corn, sour cream, and melted butter. Mix until just combined.
  3. If using, fold in the shredded cheddar cheese, and season with salt and pepper.
  4. Pour the mixture into a greased baking dish.
  5. Bake in the preheated oven for 45-50 minutes or until golden brown and set.
  6. Let it cool for a few minutes before serving.
