- 4 chicken thighs (bone-in and skin-on)
- 4 cloves garlic (minced)
- 4 tablespoons unsalted butter
- 2 tablespoons fresh thyme leaves
- 2 tablespoons lemon juice
- Salt (to taste)
- Black pepper (to taste)
- 2 tablespoons olive oil
Instructions
- Preheat your oven to 400°F (200°C).
- Pat the chicken thighs dry with paper towels and season with salt and black pepper.
- Heat olive oil in a large ovenproof skillet over medium-high heat until hot.
- Place chicken thighs skin-side down in the skillet and sear for 5-7 minutes until golden brown and crispy.
- Flip the thighs and sear for another 2 minutes on the other side. Remove the thighs from the skillet.
- Add butter and minced garlic to the skillet, stirring until the butter melts and the garlic is fragrant.
- Return chicken thighs skin-side up to the skillet and sprinkle with thyme leaves and lemon juice.
- Transfer the skillet to the oven and bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
- Let the chicken rest for a few minutes before serving.
Notes
Consider garnishing with additional fresh thyme or lemon slices before serving. For a richer experience, double the garlic and butter in the sauce.
