- 2 pounds Ground Chicken (or ground turkey or lean pork)
- 1 cup Parmesan Cheese (shredded; or Romano cheese)
- 1 cup Panko Breadcrumbs (or regular breadcrumbs)
- 2 large Eggs
- 4 cloves Minced Garlic
- 1 teaspoon Garlic Powder
- 1 teaspoon Onion Powder
- 1 teaspoon Dried Basil
- 1 teaspoon Dried Parsley
- 1 teaspoon Salt
- 1/2 teaspoon Black Pepper
- 1/2 cup Whole Milk (or plant milk if dairy-free)
- 2 tablespoons Unsalted Butter
- 1/4 cup Additional Parmesan (for sprinkling)
- 2 tablespoons Fresh Parsley (for garnish)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine ground chicken, 1 cup of parmesan cheese, panko breadcrumbs, minced garlic, garlic powder, onion powder, dried basil, dried parsley, salt, and black pepper.
- In a separate bowl, whisk together the eggs and milk until well blended.
- Pour the egg mixture into the meat mixture and gently combine.
- Transfer the mixture into a greased loaf pan, shaping it into a neat loaf.
- Melt the unsalted butter and brush it over the top of the meatloaf. Sprinkle the additional parmesan on top.
- Bake in the preheated oven for 1 hour or until the internal temperature reaches 165°F (74°C).
- Let it rest for 10 minutes before slicing.
Notes
Use a thermometer to ensure perfect doneness. Adjust garlic levels according to your taste.
