Description

A hearty and nutritious soup perfect for those following a ketogenic diet, combining protein-rich ground beef and flavorful vegetables.


Ingredients

  • 1 lb ground beef
  • 1 head cauliflower, chopped
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 can diced tomatoes
  • 1 cup celery, chopped
  • 1 cup bell pepper, chopped
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the ground beef, onion, and garlic. Cook until the beef is browned and the onions are translucent.
  3. Stir in the chopped cauliflower, celery, and bell pepper, cooking for a few minutes until slightly softened.
  4. Pour in the beef broth and add the diced tomatoes.
  5. Season with Italian seasoning, salt, and pepper.
  6. Bring to a boil, then reduce heat and let simmer for about 25-30 minutes until the cauliflower is tender.
  7. Serve hot.

Notes

For a thicker soup, puree part of the soup with an immersion blender. Fresh vegetables enhance flavor, and consider adding spinach or kale for extra nutrients.
