- 1 lb ground beef
- 1 head cauliflower, chopped
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 can diced tomatoes
- 1 cup celery, chopped
- 1 cup bell pepper, chopped
- 1 tsp Italian seasoning
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- In a large pot, heat olive oil over medium heat.
- Add the ground beef, onion, and garlic. Cook until the beef is browned and the onions are translucent.
- Stir in the chopped cauliflower, celery, and bell pepper, cooking for a few minutes until slightly softened.
- Pour in the beef broth and add the diced tomatoes.
- Season with Italian seasoning, salt, and pepper.
- Bring to a boil, then reduce heat and let simmer for about 25-30 minutes until the cauliflower is tender.
- Serve hot.
Notes
For a thicker soup, puree part of the soup with an immersion blender. Fresh vegetables enhance flavor, and consider adding spinach or kale for extra nutrients.
