Delicious low-carb fritters made with shredded chicken and cheese, perfect for a snack or meal.
Ingredients

- 2 cups cooked chicken, shredded
- 1 cup shredded cheese (cheddar or mozzarella)
- 1/2 cup almond flour
- 2 large eggs
- 1/4 cup green onions, chopped
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Oil for frying
Instructions
- In a large bowl, combine shredded chicken, cheese, almond flour, eggs, green onions, garlic powder, onion powder, salt, and pepper. Mix well until all ingredients are fully combined.
- Heat oil in a skillet over medium heat.
- Scoop tablespoon-sized portions of the mixture and drop them into the hot skillet. Flatten slightly.
- Cook for 3-4 minutes on each side or until golden brown and crispy.
- Remove from the skillet and place on a paper towel to drain excess oil.
- Serve warm and enjoy!
Notes
Use leftover rotisserie chicken for added flavor and convenience.
