Description

Delicious low-carb fritters made with shredded chicken and cheese, perfect for a snack or meal.


Ingredients

Scale
  • 2 cups cooked chicken, shredded
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1/2 cup almond flour
  • 2 large eggs
  • 1/4 cup green onions, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. In a large bowl, combine shredded chicken, cheese, almond flour, eggs, green onions, garlic powder, onion powder, salt, and pepper. Mix well until all ingredients are fully combined.
  2. Heat oil in a skillet over medium heat.
  3. Scoop tablespoon-sized portions of the mixture and drop them into the hot skillet. Flatten slightly.
  4. Cook for 3-4 minutes on each side or until golden brown and crispy.
  5. Remove from the skillet and place on a paper towel to drain excess oil.
  6. Serve warm and enjoy!

Notes

Use leftover rotisserie chicken for added flavor and convenience.
