Description
A savory, crunchy, low-carb take on the classic Reuben sandwich, filled with corned beef, Swiss cheese, and sauerkraut.
Ingredients

- 8 ounces corned beef
- 1 cup sauerkraut, drained
- 8 ounces Swiss cheese
- 1 tablespoon Dijon mustard
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Place a slice of Swiss cheese on parchment paper.
- Layer corned beef and sauerkraut on top of the cheese and drizzle with mustard.
- Roll the cheese around the filling tightly.
- Repeat with remaining ingredients.
- Place roll-ups seam-side down on a baking sheet.
- Brush with olive oil, and sprinkle with salt and pepper.
- Bake for 15-20 minutes, or until the cheese is crispy and golden.
- Serve warm.
Notes
Thoroughly drain sauerkraut to prevent sogginess. Use parchment paper for easy cleanup and monitoring of crispness.
