- 1/4 cup Heavy Whipping Cream (Use coconut cream as a low-carb alternative)
- 1 cup Shredded Cheddar Cheese (Sharp cheddar for flavor)
- 1 pound Ground Beef (Can substitute with ground chicken or turkey)
- 2 tablespoons Taco Seasoning (Homemade or low-sodium)
- 4 pieces Low-Carb Tortillas (Brands like Mission Carb Balance or almond flour)
- 1 cup Sour Cream (Substitute with Greek yogurt)
- 1 cup Lettuce (Shredded iceberg or romaine)
- 1 medium Tomato (Can replace with bell peppers)
- 1 cup Extra Cheddar Cheese (Consider adding pepper jack)
- 1/4 cup Cilantro (Substitute with parsley)
- 1/2 cup Jalapeño Slices (Optional)
- 1 tablespoon Olive Oil (Any cooking oil)
Instructions
- Cheese Sauce Preparation: Melt the butter in a saucepan over medium heat. Add cream cheese and whisk until smooth. Gradually stir in heavy whipping cream and shredded cheddar cheese until melted. Remove from heat.
- Beef Cooking: In a separate skillet, heat olive oil over medium heat. Add ground beef, cook until browned, and stir in taco seasoning. Cook for another 2-3 minutes.
- Tortillas Crisping: Crisp the low-carb tortillas in a skillet over medium-high heat for about 1-2 minutes on each side. Set aside.
- Crunchwrap Assembly: On a tortilla, layer cheese sauce, seasoned beef, sour cream, lettuce, tomatoes, extra cheddar cheese, cilantro, and jalapeño slices.
- Crunchwrap Cooking: Place a second tortilla on top, fold the edges over to create pleats. Heat more olive oil in a skillet, then cook the crunchwrap seam-side down for about 3-4 minutes until golden, then flip.
- Serving: Slice in half and serve with extra sour cream or salsa.
