- 1 cup unsweetened cocoa powder
- 1/2 cup powdered erythritol or preferred sweetener
- 1 cup unsweetened almond milk
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup heavy cream
Instructions
- In a medium saucepan, combine the cocoa powder, powdered erythritol, salt, and almond milk over medium heat.
- Stir constantly until the mixture is smooth and heated through.
- Remove from heat and add the vanilla extract.
- In a separate bowl, whip the heavy cream until soft peaks form, then gently fold it into the chocolate mixture.
- Pour the mixture into a prepared baking dish and freeze for 1-2 hours until solid.
- Cut into pieces and serve.
