- 24 slices pepperoni
- 1 cup shredded mozzarella cheese
- 1/4 cup grated parmesan cheese
- 1/2 teaspoon Italian seasoning (optional)
- 2 tablespoons low sugar pizza sauce (optional)
- Cooking spray or olive oil
Instructions
- Preheat your oven to 400°F (204°C).
- Lightly grease a mini muffin pan with cooking spray or oil.
- Place one slice of pepperoni into each muffin cup to form a base.
- In a bowl, mix mozzarella, parmesan, and Italian seasoning.
- Add a small spoonful of the cheese mix on top of the pepperoni.
- If using sauce, add a small dot under or over the cheese.
- Bake for 10 to 12 minutes until cheese is golden and bubbly.
- Let cool for 5 minutes before removing from the pan.
Notes
For extra crisp edges, broil for 30 seconds at the end but watch closely to prevent burning.
