- 1 lb ground meat (beef, chicken, or turkey)
- 1 cup Monterey Jack cheese, shredded
- 1 bell pepper, diced
- 1 medium onion, diced
- 1 tsp garlic powder
- 1 tbsp olive oil
- Salt, to taste
- Pepper, to taste
- Low-carb tortillas or large lettuce leaves
Instructions
- Preheat your oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat.
- Add diced onions and bell peppers, sauté until soft.
- Mix in ground meat and garlic powder; season with salt and pepper. Cook until browned.
- Remove from heat and let cool slightly.
- Spoon the meat mixture onto low-carb tortillas or lettuce leaves.
- Top with Monterey Jack cheese.
- Roll them up tightly and place in a baking dish.
- Bake for 15-20 minutes until cheese is melted and heated through.
- Serve warm.
Notes
For lower sodium, choose a low-sodium cheese and limit added salt. Feel free to customize protein and cheese as desired.
