- 1 cup blueberries
- 1/4 cup honey or maple syrup
- 1/2 cup rolled oats
- 1/4 cup protein powder (vanilla or unflavored)
- 1 tablespoon lemon zest

- 1/2 teaspoon vanilla extract
- Pinch of salt
Instructions
- Prepare your ingredients and workspace by draining excess liquid from cottage cheese if needed and lining a baking sheet with parchment paper.
- Combine the cottage cheese, honey (or maple syrup), lemon zest, lemon juice, and vanilla extract in a mixing bowl. Mix until smooth.
- Add rolled oats and protein powder to the mixture, folding gently.
- Fold in blueberries and a pinch of salt carefully to avoid smashing them.
- Scoop tablespoon-sized portions and roll into balls.
- Place the bites on the prepared sheet about 1 inch apart.
- Chill in the refrigerator for at least 60 minutes to set.
