- 2 pounds baby potatoes
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 teaspoon lemon zest
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Feta cheese, crumbled
- Fresh parsley for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, mix olive oil, lemon juice, lemon zest, garlic powder, oregano, salt, and pepper.
- Add the baby potatoes to the bowl and toss until well coated.
- Spread the potatoes in a single layer on a baking sheet.
- Roast in the oven for 25-30 minutes or until tender and golden brown, stirring halfway through.
- Remove from the oven and sprinkle crumbled feta cheese on top.
- Garnish with fresh parsley and serve warm.
Notes
For the best flavor, use fresh feta cheese rather than pre-crumbled varieties. This dish can also be made ahead and served later.
