Description

A delightful lemon feta potato dish that combines the earthy goodness of baby potatoes with the bright zestiness of lemon and creamy feta cheese, perfect as a side or a light meal.


Ingredients

  • 2 pounds baby potatoes
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Feta cheese, crumbled
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, mix olive oil, lemon juice, lemon zest, garlic powder, oregano, salt, and pepper.
  3. Add the baby potatoes to the bowl and toss until well coated.
  4. Spread the potatoes in a single layer on a baking sheet.
  5. Roast in the oven for 25-30 minutes or until tender and golden brown, stirring halfway through.
  6. Remove from the oven and sprinkle crumbled feta cheese on top.
  7. Garnish with fresh parsley and serve warm.

Notes
