- 4 chicken thighs
- 2 cups broccoli florets
- 2 cups baby potatoes, halved

Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine the chicken thighs, broccoli, and potatoes.
- In a separate bowl, mix the minced garlic, lemon juice, olive oil, salt, pepper, and oregano.
- Pour the marinade over the chicken and vegetables, tossing to coat evenly.
- Arrange the chicken and vegetables on a baking sheet in a single layer.
- Bake in the preheated oven for 30-35 minutes or until the chicken is cooked through and the potatoes are tender.
- Serve warm.
Notes
Use bone-in, skin-on thighs for more flavor. Add fresh herbs for additional taste. Allow chicken to rest after baking for juiciness.
