Ingredients

  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup (2 sticks) unsalted butter (at room temperature)
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar (firmly packed)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 3 tablespoons fresh lemon zest
  • 1 (11-ounce) bag white chocolate chips

Instructions

  1. Preheat the oven to 375°F (190ºC).
  2. In a small bowl, whisk together the flour, baking soda, and salt; set aside.
  3. In a large bowl, cream the butter and both sugars until light and creamy.
  4. Add the egg and vanilla extract to the butter mixture and mix until smooth.
  5. Gradually add the flour mixture until combined. Stir in the lemon zest and white chocolate chips until evenly distributed.
  6. Roll the dough into ping pong-sized balls and place them on a lined cookie sheet. Flatten slightly.
  7. Bake for 10-12 minutes or until the cookies are just beginning to brown slightly on the bottom. Do not overbake.
  8. Allow the cookies to cool for a few minutes on the sheets, then transfer to a cooling rack to cool completely.
  9. Store in an airtight container.
