Description

A warm and comforting soup loaded with rich flavors of potatoes, cheese, and bacon, perfect for chilly days.


Ingredients

  • 4 large potatoes, peeled and diced
  • 1/2 cup chopped onion
  • 1/4 cup butter
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1 cup cooked bacon, crumbled
  • Salt and pepper to taste
  • Green onions for garnish

Instructions

  1. In a large pot, melt the butter over medium heat and sauté the onion until translucent.
  2. Add the diced potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15-20 minutes.
  3. Mash some of the potatoes in the soup to thicken it.
  4. Stir in the heavy cream, cheddar cheese, and crumbled bacon.
  5. Continue to cook until the cheese is melted and the soup is heated through.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with green onions and additional bacon if desired.
