Description

A warm and comforting Loaded Potato Soup featuring creamy potatoes, cheddar cheese, and crispy bacon, perfect for chilly days.

Ingredients

Scale
  • 4 large potatoes, peeled and diced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup crispy bacon, crumbled
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. In a large pot, sauté the diced onion and minced garlic until fragrant.
  2. Add the diced potatoes and broth, then bring to a boil.
  3. Reduce the heat and simmer until the potatoes are tender, about 15-20 minutes.
  4. Use a potato masher or immersion blender to partially mash the potatoes for a creamy texture.
  5. Stir in the heavy cream, shredded cheddar cheese, and bacon.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with chopped green onions.

Notes

For a thicker soup, let it simmer longer. You may substitute half-and-half for a lighter version and experiment with various toppings.
