Instructions
- Season the chicken breast with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat and sear the chicken for 5 to 7 minutes until browned. Set aside.
- In the same skillet, reduce heat to medium, melt the butter, and sauté the minced garlic for about 30 seconds until fragrant.
- Whisk in flour, cooking for 1 to 2 minutes to create a roux.
- Gradually pour in the chicken broth and cream, whisking until the sauce thickens.
- Stir in the grated Parmesan cheese until melted.
- Add sun-dried tomatoes, smoked paprika, and Italian seasoning, simmering for a few minutes.
- Return the seared chicken to the skillet to cook in the sauce.
- Boil the penne pasta according to package instructions, drain, and toss in the skillet with the sauce.
- Garnish with fresh basil before serving.
