A delightful dish of salmon fillets cooked in a creamy sun-dried tomato sauce, perfect for romantic dinners or impressing guests.

- 3–4 salmon fillets, skin removed
- 2 tbsp olive oil
- 1 tsp dried basil
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp dried thyme
- 3/4 tsp red pepper flakes
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 cup chicken stock, unsalted
- 1/2 cup heavy cream
- 1/3 cup chopped sundried tomatoes
- 5 garlic cloves, minced
- 1/2 cup freshly shredded parmesan cheese
- Fresh basil for garnish
Instructions
- Mixed the seasonings in a bowl: dried basil, garlic powder, onion powder, dried thyme, red pepper flakes, salt, and black pepper.
- Rub half of the seasoning mix into the salmon fillets on both sides.
- Heat olive oil in a skillet over medium-high heat and sear the salmon flesh side down for about 5 minutes per side. Remove and set aside.
- In the same skillet, sauté minced garlic and chopped sun-dried tomatoes for 1-2 minutes on low heat.
- Deglaze the pan with chicken stock, scraping up any brown bits.
- Add heavy cream, parmesan cheese, and the remaining seasoning mix; combine and simmer for 10-15 minutes until thickened.
- Return the salmon to the skillet, spoon sauce over it, and cook for an additional 3-5 minutes based on desired doneness.
- Garnish with fresh basil and serve.
Notes
Ensure salmon is not overcooked for best texture. Can substitute with different fish or tofu for variation.
