Description

A delightful dish of salmon fillets cooked in a creamy sun-dried tomato sauce, perfect for romantic dinners or impressing guests.


Ingredients

  • 34 salmon fillets, skin removed
  • 2 tbsp olive oil
  • 1 tsp dried basil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp dried thyme
  • 3/4 tsp red pepper flakes
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 cup chicken stock, unsalted
  • 1/2 cup heavy cream
  • 1/3 cup chopped sundried tomatoes
  • 5 garlic cloves, minced
  • 1/2 cup freshly shredded parmesan cheese
  • Fresh basil for garnish

Instructions

  1. Mixed the seasonings in a bowl: dried basil, garlic powder, onion powder, dried thyme, red pepper flakes, salt, and black pepper.
  2. Rub half of the seasoning mix into the salmon fillets on both sides.
  3. Heat olive oil in a skillet over medium-high heat and sear the salmon flesh side down for about 5 minutes per side. Remove and set aside.
  4. In the same skillet, sauté minced garlic and chopped sun-dried tomatoes for 1-2 minutes on low heat.
  5. Deglaze the pan with chicken stock, scraping up any brown bits.
  6. Add heavy cream, parmesan cheese, and the remaining seasoning mix; combine and simmer for 10-15 minutes until thickened.
  7. Return the salmon to the skillet, spoon sauce over it, and cook for an additional 3-5 minutes based on desired doneness.
  8. Garnish with fresh basil and serve.

Notes

Ensure salmon is not overcooked for best texture. Can substitute with different fish or tofu for variation.
