Description

Delicious Mediterranean quesadillas filled with spinach, feta, mozzarella, and red onion, perfect for a quick meal.


Ingredients

  • 4 flour tortillas
  • 1 cup fresh spinach (chopped)
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup crumbled feta cheese
  • 1 small tomato (diced)
  • 1/4 cup red onion (thinly sliced)
  • 1 tablespoon olive oil
  • Black pepper (to taste)

Instructions

  1. In a mixing bowl, combine the mozzarella cheese, feta cheese, chopped spinach, diced tomato, thinly sliced red onion, and black pepper. Mix well to ensure all ingredients are evenly distributed.
  2. Lay one tortilla flat on a clean surface and place one-fourth of the filling mixture on half of the tortilla. Fold the tortilla over to cover the filling.
  3. Heat a non-stick skillet over medium heat and add the olive oil.
  4. Place the filled tortilla in the skillet and cook for about 3-4 minutes until it’s golden brown.
  5. Flip the quesadilla carefully using a spatula and cook for another 3-4 minutes until both sides are crispy and golden.
  6. Remove from heat and slice into wedges. Serve warm and enjoy!
