Delicious Mediterranean quesadillas filled with spinach, feta, mozzarella, and red onion, perfect for a quick meal.
Ingredients

- 4 flour tortillas
- 1 cup fresh spinach (chopped)
- 1/2 cup shredded mozzarella cheese
- 1/2 cup crumbled feta cheese
- 1 small tomato (diced)
- 1/4 cup red onion (thinly sliced)
- 1 tablespoon olive oil
- Black pepper (to taste)
Instructions
- In a mixing bowl, combine the mozzarella cheese, feta cheese, chopped spinach, diced tomato, thinly sliced red onion, and black pepper. Mix well to ensure all ingredients are evenly distributed.
- Lay one tortilla flat on a clean surface and place one-fourth of the filling mixture on half of the tortilla. Fold the tortilla over to cover the filling.
- Heat a non-stick skillet over medium heat and add the olive oil.
- Place the filled tortilla in the skillet and cook for about 3-4 minutes until it’s golden brown.
- Flip the quesadilla carefully using a spatula and cook for another 3-4 minutes until both sides are crispy and golden.
- Remove from heat and slice into wedges. Serve warm and enjoy!
