Ingredients

  • 1 cup orzo pasta
  • 2 cups vegetable broth
  • 1 lemon (zested and juiced)

Instructions

  1. Heat olive oil in a skillet over medium heat. Season the salmon fillets with salt and pepper, then add them to the skillet. Cook for about 4-5 minutes on each side until the salmon is seared and cooked through. Remove from skillet and set aside.
  2. In the same skillet, add minced garlic and cook for 1 minute until fragrant. Add the orzo and vegetable broth. Bring to a boil, then reduce heat and simmer for about 10 minutes or until the orzo is tender.
  3. Stir in lemon juice and zest, then season with salt and pepper to taste.
  4. Serve the orzo topped with the seared salmon and garnish with fresh parsley.
