- 2 garlic cloves, minced
- 1 tbsp lemon juice
- 2 cups cooked grains (brown rice or quinoa)
- Cherry tomatoes, halved
- Cucumber, diced
- Red onion, thinly sliced
- Kalamata olives, pitted and sliced
- Tzatziki sauce (Greek yogurt, grated cucumber, dill, lemon juice, salt, and pepper)
Instructions
- Marinate the steak: In a bowl, combine the olive oil, minced garlic, lemon juice, oregano, thyme, salt, and pepper. Coat the sirloin steak thoroughly in this mixture. Let it marinate for at least 30 minutes.
- Prepare tzatziki: Mix Greek yogurt, grated cucumber, lemon juice, minced garlic, and dill in a separate bowl, adding salt and pepper to taste. Refrigerate to chill.
- Cook the steak: Heat a skillet over medium-high heat. Sear the steak for 4–5 minutes on each side, or until desired doneness. Let rest and slice thinly against the grain.
- Assemble your bowl: Layer cooked grains in a bowl, top with sliced steak, halved cherry tomatoes, diced cucumber, red onion, and Kalamata olives. Drizzle with tzatziki sauce before serving.
