- 2 cups cooked shredded chicken
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 can diced tomatoes with green chilies
- 1 cup cooked rice
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 tablespoon taco seasoning
- 1/2 cup diced bell peppers
- 1/2 cup diced onions
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine the shredded chicken, black beans, corn, diced tomatoes, cooked rice, taco seasoning, bell peppers, onions, salt, and pepper.
- Mix well and transfer to a greased baking dish.
- Top with shredded cheese.
- Bake in the oven for 30 minutes or until heated through and cheese is bubbly.
- Serve hot.
Notes
Use rotisserie chicken to save time and adjust the taco seasoning based on your spice preference. For a crispy topping, broil the casserole for the last few minutes of baking.
