- 420 grams canned Mexican chili beans
- 2 tablespoons sour cream
- 1 avocado, mashed
- 1 tablespoon coriander leaves, chopped
- 1 onion, chopped
- 8 corn tortillas
- 1 lime, juiced
- 250 grams premium beef mince
- 250 grams taco sauce
- 1 tablespoon extra virgin olive oil
- 200 grams tub guacamole to serve
Instructions
- Preheat your oven to 180°C.
- Heat the corn tortillas in the microwave for 20 to 30 seconds until soft.
- Mold the tortillas into a Texas muffin pan to create baskets.
- Bake the tortillas for about 6 minutes until they are crisp and lightly golden.
- In a frying pan, heat olive oil over medium heat, then add onion and beef mince, cooking until browned.
- Stir in chili beans and taco sauce, cooking until heated through.
- Mash the avocado and mix with lime juice.
- Fill each tortilla basket with the beef mixture, then top with guacamole and sour cream.
- Garnish with coriander leaves if desired.
