Description

A delicious homemade version of Taco Bell’s Mexican Pizza, loaded with seasoned beef, tortillas, and cheese. Perfect for sharing!


Ingredients

  • 8 flour tortillas (or corn tortillas)
  • 1 lb ground beef
  • 2 tbsp taco seasoning
  • 1/4 cup water
  • 4 tbsp enchilada sauce
  • 8 ounces refried beans (1/2 can)
  • 1/2 cup shredded cheese (cheddar, mozzarella, or Mexican cheese blend)
  • 1 tomato (roma or beefsteak, seeds removed and diced)
  • 1 small red onion (diced)
  • 1/4 cup black olives (sliced)
  • 1/4 cup sour cream
  • 2 green onions (finely diced)

Instructions

  1. In a large frying pan or skillet on medium heat, add the ground beef and sauté for about 5-8 minutes until fully cooked, breaking it into small pieces.
  2. Remove any excess grease from the pan, then add the taco seasoning, water, and 4 tablespoons of enchilada sauce. Stir until evenly combined and let it simmer for 1-2 minutes.
  3. Spread a layer of refried beans on one tortilla, add a layer of seasoned ground beef, and then top with shredded cheese before adding another tortilla.
  4. Spread 1 tablespoon of enchilada sauce on top of the last tortilla and sprinkle with shredded cheese.
  5. Repeat the process for the remaining tortillas to assemble all pizzas.
  6. For the air fryer method, preheat to 400°F, place the pizza inside, and cook for about 5 minutes until crispy.
  7. For the oven method, preheat to 350°F, bake for 8-10 minutes until edges are crispy.
  8. For the pan-frying method, heat oil in a skillet, add one pizza at a time, cover, and cook for 4-5 minutes until cheese melts and bottom is crispy.
  9. Top with desired garnishes and serve warm.

Notes

For extra crispy tortillas, consider toasting them before assembly. This recipe can be customized to suit vegetarian diets by using plant-based crumbles.
