Description

A quick and flavorful pasta dish with garlic, fresh tomatoes, and a hint of spice, perfect for late-night cravings.


Ingredients

  • Spaghetti or linguine
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1/2 teaspoon red pepper flakes
  • 2 cups fresh tomatoes, chopped
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup grated Parmesan cheese
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Cook the spaghetti or linguine according to package instructions.
  2. While the pasta is cooking, heat olive oil in a skillet over medium heat.
  3. Add minced garlic and red pepper flakes, sauté until fragrant.
  4. Toss in chopped fresh tomatoes and cook until softened.
  5. Drain the pasta, reserving some pasta water, and add it to the skillet.
  6. Mix well, adding reserved pasta water if needed.
  7. Season with salt and black pepper, then finish with chopped parsley and grated Parmesan cheese.
  8. Serve immediately.

Notes

Use fresh, ripe tomatoes for the best flavor. Adjust spice level as desired.
