- Spaghetti or linguine
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1/2 teaspoon red pepper flakes
- 2 cups fresh tomatoes, chopped
- 1/4 cup fresh parsley, chopped
- 1/2 cup grated Parmesan cheese
- Salt, to taste
- Black pepper, to taste
Instructions
- Cook the spaghetti or linguine according to package instructions.
- While the pasta is cooking, heat olive oil in a skillet over medium heat.
- Add minced garlic and red pepper flakes, sauté until fragrant.
- Toss in chopped fresh tomatoes and cook until softened.
- Drain the pasta, reserving some pasta water, and add it to the skillet.
- Mix well, adding reserved pasta water if needed.
- Season with salt and black pepper, then finish with chopped parsley and grated Parmesan cheese.
- Serve immediately.
Notes
Use fresh, ripe tomatoes for the best flavor. Adjust spice level as desired.
