Description

A delightful chicken casserole with creamy cheeses and a crunchy cracker topping, perfect for busy weeknights or gatherings.


Ingredients

  • 4½ cups chopped cooked chicken
  • 4 oz cream cheese (room temperature)
  • 1 cup cottage cheese
  • ½ cup sour cream
  • 1 (10.5-oz) can Unsalted Cream of Chicken Soup
  • ¼ tsp garlic powder
  • ¼ tsp dried onion powder
  • 1 sleeve Ritz crackers (crushed)
  • 5 Tbsp butter (melted)

Instructions

  1. Preheat the oven to 350°F. Lightly spray a 9×9-inch baking dish with cooking spray and set aside.
  2. In a large bowl, combine the chicken, cream cheese, cottage cheese, sour cream, garlic powder, onion powder, and the cream of chicken soup. Mix well until everything is combined.
  3. Spread the chicken mixture evenly into the prepared baking dish.
  4. In a separate bowl, combine the crushed crackers and melted butter. Sprinkle this mixture over the chicken layer.
  5. Bake uncovered for 30 to 40 minutes or until the top is golden and bubbly.

Notes

Serve hot alongside a salad or steamed vegetables. Leftovers can be stored in the refrigerator for up to 3 days or frozen for up to 3 months.
