Description

Ingredients

  • 1 cup couscous
  • 1 lb chicken breast, diced
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 zucchini, diced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • Salt and pepper to taste
  • 1/4 cup raisins or dried apricots, chopped
  • 1/4 cup fresh parsley, chopped
  • Lemon wedges for serving

Instructions

  1. Cook couscous according to package instructions. Set aside.
  2. In a large skillet, heat olive oil over medium heat. Add onion and garlic, and sauté until fragrant.
  3. Add the chicken, cumin, coriander, salt, and pepper. Cook until chicken is browned and cooked through.
  4. Stir in bell pepper and zucchini, cooking until just tender.
  5. Mix in the couscous and dried fruits, combining well.
  6. Serve topped with fresh parsley and lemon wedges.

Notes

Chop your vegetables and chicken beforehand to save time during cooking. Fluff couscous with a fork after cooking to keep it light and airy.
