Ingredients

- 1 cup couscous
- 1 lb chicken breast, diced
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 zucchini, diced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- Salt and pepper to taste
- 1/4 cup raisins or dried apricots, chopped
- 1/4 cup fresh parsley, chopped
- Lemon wedges for serving
Instructions
- Cook couscous according to package instructions. Set aside.
- In a large skillet, heat olive oil over medium heat. Add onion and garlic, and sauté until fragrant.
- Add the chicken, cumin, coriander, salt, and pepper. Cook until chicken is browned and cooked through.
- Stir in bell pepper and zucchini, cooking until just tender.
- Mix in the couscous and dried fruits, combining well.
- Serve topped with fresh parsley and lemon wedges.
Notes
Chop your vegetables and chicken beforehand to save time during cooking. Fluff couscous with a fork after cooking to keep it light and airy.
