Description

A hearty and comforting casserole made with chicken, mushrooms, and creamy Gruyere cheese.


Ingredients

  • 2 cups cooked rice
  • 1 pound chicken breast, diced
  • 1 cup mushrooms, sliced
  • 1 cup Gruyere cheese, shredded
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until translucent.
  3. Add the sliced mushrooms to the skillet and cook until softened.
  4. In a large bowl, combine the cooked rice, diced chicken, sautéed mushrooms, chicken broth, heavy cream, thyme, salt, and pepper. Mix well.
  5. Transfer the mixture to a greased casserole dish and top with shredded Gruyere cheese.
  6. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
  7. Garnish with chopped fresh parsley before serving.
