A hearty and comforting casserole made with chicken, mushrooms, and creamy Gruyere cheese.

- 2 cups cooked rice
- 1 pound chicken breast, diced
- 1 cup mushrooms, sliced
- 1 cup Gruyere cheese, shredded
- 1 cup chicken broth
- 1/2 cup heavy cream
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until translucent.
- Add the sliced mushrooms to the skillet and cook until softened.
- In a large bowl, combine the cooked rice, diced chicken, sautéed mushrooms, chicken broth, heavy cream, thyme, salt, and pepper. Mix well.
- Transfer the mixture to a greased casserole dish and top with shredded Gruyere cheese.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
- Garnish with chopped fresh parsley before serving.
Notes
Perfect for using up leftover chicken or rice. Tailor the seasoning to your taste and try different cheese variants.
