Description

Ingredients

  • 4 cups sliced nectarines
  • 1 cup sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 tablespoon cornstarch
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 3/4 cup milk

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine sliced nectarines, sugar, lemon juice, vanilla extract, and cornstarch in a large bowl. Mix well and set aside.
  3. Whisk together flour, baking powder, and salt in another bowl.
  4. Stir in melted butter and milk until just combined.
  5. Pour the nectarines into a greased baking dish.
  6. Spoon the batter over the top of the nectarines.
  7. Bake for 35-40 minutes or until the top is golden and a toothpick comes out clean.
  8. Let it cool slightly before serving.

Notes

Use ripe but firm nectarines for the best texture. For a dairy-free version, swap the milk for almond or oat milk and use plant-based butter.
