Description

Bright and juicy nectarine muffins that are an easy, quick treat for breakfast or snacks.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 1/3 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup ripe nectarines, diced

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. Whisk together the flour, sugar, baking powder, and salt in a large bowl.
  3. Mix together the milk, vegetable oil, egg, and vanilla extract in another bowl.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Fold in the diced nectarines gently.
  6. Divide the batter into the prepared muffin tin, filling each cup about 2/3 full.
  7. Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
  8. Allow to cool for a few minutes in the pan, then transfer to a wire rack to cool completely.

Notes

For gluten-free, substitute a 1:1 gluten-free baking flour blend. Enjoy with butter or yogurt for breakfast.
