Ingredients

  • 1/3 cup natural, smooth peanut butter
  • 2 1/4 cups rolled oats
  • 1 tsp vanilla extract
  • 3/4 cup dark chocolate
  • 2 tsp coconut oil

Instructions

  1. In a large mixing bowl, stir together rolled oats, honey, smooth peanut butter, and vanilla extract until evenly coated.
  2. Grease a muffin tin lightly and divide the oat mixture among the muffin cups, pressing down firmly.
  3. Melt the dark chocolate and coconut oil in a microwave-safe bowl in 15-20 second bursts, stirring until smooth.
  4. Spread the melted chocolate over the oat mixture in each cup and sprinkle with sea salt if desired.
  5. Freeze for about one hour until firm, then remove from the tin and store in the refrigerator or freezer.
