Ingredients

- 1 cup whole-grain oats
- 1/2 cup peanut butter
- 1/4 cup maple syrup or agave nectar
- 1/4 cup chia seeds
- 1/4 cup flaxseeds
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/4 cup dark chocolate chips (optional)
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, mix together the oats, peanut butter, maple syrup (or agave nectar), chia seeds, flaxseeds, vanilla extract, baking soda, and salt until well combined.
- If desired, fold in the chocolate chips.
- Scoop tablespoon-sized portions of the dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Flatten each cookie slightly with the back of a spoon.
- Bake for 12-15 minutes or until the edges are golden.
- Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
