Description

An easy to prepare dish that transforms simple chicken breasts into a gourmet meal, ideal for busy weeknights or dinner parties.


Ingredients

Scale
  • 4 chicken breasts
  • 1 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup cherry tomatoes
  • 1 cup spinach
  • Fresh basil for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, whisk together balsamic vinegar, olive oil, garlic, Italian seasoning, salt, and pepper.
  3. Place the chicken breasts in a large oven-safe skillet and pour the balsamic mixture over them.
  4. Add cherry tomatoes around the chicken.
  5. Bake in the preheated oven for 20-25 minutes or until the chicken is cooked through.
  6. In the last 5 minutes of cooking, add spinach to the skillet.
  7. Remove from the oven and garnish with fresh basil before serving.

Notes

For extra flavor, marinate the chicken in the balsamic mixture for an hour before cooking. Use a meat thermometer to ensure chicken’s internal temperature reaches 165°F (74°C).
