- 4 chicken breasts
- 1 cup balsamic vinegar
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 cup cherry tomatoes
- 1 cup spinach
- Fresh basil for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, whisk together balsamic vinegar, olive oil, garlic, Italian seasoning, salt, and pepper.
- Place the chicken breasts in a large oven-safe skillet and pour the balsamic mixture over them.
- Add cherry tomatoes around the chicken.
- Bake in the preheated oven for 20-25 minutes or until the chicken is cooked through.
- In the last 5 minutes of cooking, add spinach to the skillet.
- Remove from the oven and garnish with fresh basil before serving.
Notes
For extra flavor, marinate the chicken in the balsamic mixture for an hour before cooking. Use a meat thermometer to ensure chicken’s internal temperature reaches 165°F (74°C).
