Delicious and easy-to-prepare One-Pan Balsamic Chicken, infusing tender chicken with a tangy balsamic marinade and vibrant vegetables all cooked in one skillet.

- 4 boneless, skinless chicken breasts
- 1 cup balsamic vinegar
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1 cup cherry tomatoes
- 1 cup spinach
Instructions
- In a large bowl, whisk together the balsamic vinegar, olive oil, minced garlic, oregano, salt, and pepper.
- Add the chicken breasts to the marinade and let them sit for at least 30 minutes.
- Preheat a large skillet over medium-high heat.
- Remove the chicken from the marinade and add it to the skillet.
- Cook the chicken for about 5-7 minutes on each side, until cooked through.
- Once the chicken is nearly done, add the cherry tomatoes and spinach to the skillet, pouring the reserved marinade over the top.
- Cook for an additional 5 minutes, allowing the spinach to wilt and sauce to thicken.
- Serve warm and enjoy!
Notes
For best flavor, marinate the chicken for as long as possible. Fresh ingredients will enhance the dish significantly.
