Description

Delicious and easy-to-prepare One-Pan Balsamic Chicken, infusing tender chicken with a tangy balsamic marinade and vibrant vegetables all cooked in one skillet.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 cup cherry tomatoes
  • 1 cup spinach

Instructions

  1. In a large bowl, whisk together the balsamic vinegar, olive oil, minced garlic, oregano, salt, and pepper.
  2. Add the chicken breasts to the marinade and let them sit for at least 30 minutes.
  3. Preheat a large skillet over medium-high heat.
  4. Remove the chicken from the marinade and add it to the skillet.
  5. Cook the chicken for about 5-7 minutes on each side, until cooked through.
  6. Once the chicken is nearly done, add the cherry tomatoes and spinach to the skillet, pouring the reserved marinade over the top.
  7. Cook for an additional 5 minutes, allowing the spinach to wilt and sauce to thicken.
  8. Serve warm and enjoy!

Notes

For best flavor, marinate the chicken for as long as possible. Fresh ingredients will enhance the dish significantly.
